Born in Mexico City to French parents, Pollak grew up immersed in a vibrant, multicultural environment that naturally shaped his global perspective on hospitality. His formal journey into the epicentre of luxury began in France, where he studied Hotel Management and Hospitality at the prestigious Institut Paul Bocuse in Lyon.
This formidable training paved the way for a lifelong career with Four Seasons, which began in 1996 when he joined Four Seasons Hotel Mexico City as Bar Manager.
