First Impression
Stepping into the Hyatt Regency Amsterdam, the transition from the bustling city streets to a tranquil botanical sanctuary is instantaneous. The lobby immediately captivates with its lush “living walls” and a sophisticated arrangement of greenery that breathes life into the space, perfectly signaling the hotel’s commitment to sustainable luxury. It doesn’t feel like a traditional hotel entrance; it feels like an elegant, sun-drenched conservatory. This sense of harmony was further elevated by the exceptionally warm welcome from David Bader, the General Manager. His personal greeting added a layer of genuine hospitality to the modern, eco-conscious surroundings, making it clear that at this amazing hotel, high-end comfort and environmental mindfulness go hand-in-hand.

MAMA MAKAN RESTAURANT
An Authentic Indonesian Gem in the Heart of Amsterdam!
If you are looking for an exceptional Indonesian dining experience in Amsterdam, Mama Makan is an absolute must-visit. From the moment you walk in, the lush, botanical-inspired decor and the warm, welcoming staff transport you straight to Southeast Asia.
The food, however, is the true star of the show. We started with the Sate Selection, which was the perfect introduction to the kitchen’s skill. The chicken thigh was incredibly succulent, and the beef was grilled to perfection. I was particularly impressed by the vegetarian options—the oyster mushroom and tofu sates were packed with smoky flavour and had a wonderful texture that even the meat-eaters at our table loved.
For the mains, the Spatchcocked Baby Chicken was a standout. The infusion of lemongrass and kaffir lime gave it a bright, aromatic punch, and the chicken itself was remarkably tender. It was served with garlic string beans that had just the right amount of snap.
We also shared the Whole Sea Bream, and it was spectacular. The fish was perfectly cooked, but the woku bumbu and green sambal were the real highlights—bold, spicy, and authentic. The accompanying atjar provided a refreshing, tangy crunch that balanced the richness of the spices beautifully.
The service was attentive without being intrusive, and the cocktails paired perfectly with the bold flavours of the meal. Whether you are a local or just visiting Amsterdam, do yourself a favour and book a table here. I can’t wait to come back!
Stefano's Verdict
My final verdict on the Hyatt Regency Amsterdam is one of total refinement. The Regency Executive Suite is a masterclass in modern comfort, offering generous space and floor-to-ceiling views that make every morning feel special. Combined with Regency Club Access, the experience becomes seamless, providing a quiet haven for evening cocktails and hors d’oeuvres. Dining at Mama Makan was a sensory highlight; the authentic Indonesian flavors are bold and beautifully presented, offering a vibrant contrast to the hotel’s serene atmosphere. Above all, the hospitality is what lingers—every interaction felt personal, professional, and genuinely warm, cementing this hotel as a premier Amsterdam destination.
