The moment I arrived, I was struck by the dual panoramas: the glittering, iconic Tokyo Tower on one side and the tranquil, shimmering waters of Tokyo Bay on the other.
The experience is elevated from the very start. Upon arrival on the ground floor, I was escorted to the 35th-floor lobby before ascending further to the Fairmont Gold Lounge on level 42 for a private check-in. This “hotel-within-a-hotel” concept ensures an effortless arrival at a specially reserved reception desk.

Spanning a palatial 88 m², my Fairmont Corner Gold Suite was a sanctuary of Timeless Elegance. The design seamlessly bridges the gap between old and new, honouring the heritage of the Shibaura district. The interior styling reflects Japanese crafts with a contemporary sensibility; the artwork is curated to highlight the harmonious overlap of traditional techniques and modern flair.
The standout architectural feature is the “Engawa” seating area. In traditional Japanese architecture, the Engawa is a wooden veranda that connects the indoors with nature. Here, it is reimagined as a sophisticated lounge space that invites you to immerse yourself in the panoramic views of Tokyo Tower, Tokyo Skyline and Tokyo Bay, including Rainbow Bridge.
The suite is a tech-lover’s dream and a connoisseur’s retreat. Premium amenities include the Dyson Supersonic r™ Hair Dryer & Airwrap™ Multi-Styler, a Dyson Air Purifier, and a 65-inch Smart TV paired with a SONY Sound Bar and a Marshall Bluetooth speaker. The bathroom, stocked with Le Labo Santal 33, felt like a private spa, while the Nespresso machine provided the perfect gourmet coffee to enjoy while watching the city wake up. This is luxury defined by privacy, comfort, and an unwavering attention to detail.
Evening Cocktails at Fairmont Gold Lounge
As the sun dipped below the horizon, the Fairmont Gold Lounge transformed into an exclusive retreat. With views stretching towards the Tokyo Sky Tree, the atmosphere was one of refined sophistication. I sampled the “SKY” Evening Cocktail menu, which was brilliantly paired with a crisp Aperol Spritz and a classic Mimosa. The culinary offerings were exceptional:
- Smoked Salmon & Spinach Crepe Roll with a savoury Soy Koji Aioli.
- A tender Roast Beef Sandwich accented with horseradish cream.
- A rich Mushroom & Ricotta Quiche.
- Prosciutto served with melon on Melba toast with a balsamic drizzle.
- A vibrant Grilled Prawn & Avocado Wrap with sweet chili mayo.
- The Sakura Patisserie and a zesty Lemon Meringue Tart provided a perfect, sweet conclusion to the twilight hour.
Charcoal-Fired Artistry at DRIFTWOOD Bar & Grill
Dinner at DRIFTWOOD Bar & Grill is a sensory performance staged against the most dramatic backdrop in the capital. Occupying a prime spot on the 35th floor, the restaurant hums with a magnetic energy. As the sky deepens, the amber glow of the interior creates an intimate cocoon, while the curated pulse of DJ sounds provides a rhythmic heartbeat to the evening. The focal point is the floor-to-ceiling view where the crimson lattice of Tokyo Tower stands so close it feels like a dining companion.
The culinary philosophy is a mastery of charcoal-fired techniques, where primitive fire meets Japanese elegance. My 5-Course Menu began with the Seasonal Sakura Wood Smoked Fish Carpaccio. This was a masterclass in seasonal storytelling; the delicate Sakura smoke clung to the pristine fish, while salty Bottarga and pickled Myoga added complex umami. The addition of finger lime—citrus pearls that pop on the tongue—provided a sharp, fragrant finish alongside the Sudachi Ponzu.
The transition to the hot appetiser brought Pan Seared Scallops that were buttery and translucent at the centre. Bathed in a decadent Truffle Beurre Blanc, the dish was elevated by the earthy notes of pickled Japanese mushrooms—a luxurious plate that beautifully balanced rich European classicism with Japanese acidity.
For the main course, the 120g Australian Angus Sirloin carried a sublime smokiness from the charcoal grill. The true revelation, however, was the Wagyu Tallow Mashed Potatoes. Infusing the mash with rendered Wagyu fat created a silken texture so rich it redefined the side dish entirely. Finished with a glossy red wine sauce and crisp asparagus, it was a dish of absolute calibre.
The evening peaked with a decadent Hot Chocolate Fondant Soufflé. As the spoon broke the delicate shell, a molten heart of cocoa spilled out, contrasting perfectly with the velvety vanilla ice cream. Dining here during Golden Week is an experience that lingers—a place where the theatricality of the grill perfectly matches the sparkle of the Tokyo skyline.
High-Altitude Breakfast at KILN & TONIC
Breakfast on the 35th-floor terrace is nothing short of high-altitude magic. During Golden Week, the air feels celebratory. Dining al fresco with Tokyo Tower and the bay in full view is a sophisticated way to start the morning. The buffet and à la carte selections blend premium local ingredients with chef-crafted delicacies, offering a tranquil start to a holiday morning in an atmosphere of pure elegance.
Relaxation Under the Open Sky
The outdoor relaxation pool and sundeck offer a rare luxury in the heart of Tokyo. It is a space for “serene bliss,” where you can unwind on a lounger with the Tokyo Tower creating a dramatic backdrop. It is the perfect spot to soak up the spring sunshine and the architectural beauty of the city simultaneously.
Afternoon Tea with a Bay View
Returning to the Fairmont Gold Lounge for Afternoon Tea offered a change of pace. Overlooking the serene waters of Tokyo Bay, the tea service is a quiet, indulgent affair. The selection of delicate finger sandwiches, warm scones, and artisanal pastries, paired with premium teas, provided a moment of stillness amidst a busy Golden Week itinerary.
The Sky-High Infinity Pool
For those seeking rejuvenation, the 20-metre indoor infinity pool on the level 35th is a spectacular highlight. Floating at the edge of the glass, it feels as though the water merges with the city skyline. Whether you are swimming laps or relaxing in the soothing saunas, the uninterrupted views of Tokyo Tower ensure that the sense of place is never lost. It is a stylish, sky-high haven for the mind and body.
Coastal Flavours at KILN & TONIC
For my final evening at Fairmont Tokyo, I visited KILN & TONIC, the hotel’s vibrant 35th-floor brasserie. While DRIFTWOOD leans into moody glamour, KILN & TONIC is a breath of fresh, coastal air. The concept celebrates the “Kiln”—the roaring warmth of a wood-fired oven—and the “Tonic”—artisanal botanical drinks. Inspired by the sun-drenched shores of the Mediterranean and Southern California, the atmosphere is bright and inviting, particularly on the open-air terrace where the evening breeze carries the scent of charred wood and salt.
I opted for the “Del Mar” Dinner Course, a culinary journey designed to showcase the treasures of the sea refined by fire. The experience began with a dual Amuse-Bouche: a rich Chicken Liver Terrine with mango and hazelnuts on buttery brioche, followed by a zesty Mackerel Escabeche where the acidity of lemon and chili danced beautifully with sweet carrots.
The appetisers displayed stunning precision. The Marinated Sweet Shrimp paired succulent seafood with creamy guacamole and the saline pop of premium caviar, finished with a subtle, warming hint of curry mayonnaise. Next came the Galician-Style Octopus, which showcased the “Kiln” element perfectly. Expertly charred to smoky perfection while remaining incredibly tender within, it was served with Osmic tomatoes and Grana di Ezo, a clever Japanese take on hard cheese.
The fish course, Spring Sea Bream Acqua Pazza, arrived as a fragrant celebration of spring. Poached in a savoury broth with fennel and rape blossoms, it felt quintessentially Japanese in its freshness yet Mediterranean in soul. For the main event, the Grilled Japanese Beef Tenderloin displayed the incredible depth of flavour only wood-fired heat can provide. Served with roasted seasonal vegetables and a glossy red wine sauce, it was a moment of pure, high-altitude luxury.
To conclude, the Hokkaido Mascarpone Tiramisu offered a local twist on the Italian classic. The Rainforest Coffee Jelly provided a sophisticated bitterness that cut through the silken Hokkaido dairy. Watching the moon reflect off the serene waters of Tokyo Bay while the embers of the wood-fired oven glowed, I realised KILN & TONIC is where bold coastal flavours meet the sparkling heart of Tokyo.

My verdict on Fairmont Tokyo? It is a triumphant debut for the brand in Japan. By successfully blending the “Fairmont Gold” legacy of world-class service with authentic Japanese design elements like the Engawa, the hotel offers something truly unique in the city’s luxury landscape.
Staying here during Golden Week provided a front-row seat to Tokyo’s beauty. Whether you are admiring the tower from the infinity pool or savouring wood-fired delicacies at Kiln & Tonic, every moment feels like a privileged escape. Fairmont has not just opened a hotel; they have created a sophisticated urban sanctuary that celebrates the very best of Tokyo. A masterpiece of sky-high hospitality.
