First Impression


Stepping into Ciel Bleu on the 23rd floor of Hotel Okura Amsterdam was an experience that began long before the first bite. The moment the elevator doors opened, I was greeted not just by the restaurant’s elegant ambiance, but by Amsterdam laid out below in a breathtaking panoramic view. From this vantage point, the city sparkled, a vast tapestry of lights and landmarks stretching to the horizon. It was an immediate “wow” moment, setting a spectacular stage for the evening. This incredible vista, combined with the knowledge that I was about to experience two-Michelin-starred cuisine, created an overwhelming sense of anticipation and wonder. It felt like dining among the stars, with the city as our backdrop. and the best thing is to meet with Executive Chef Arjan Speelman himself!

My sunset dining experience at the two-Michelin-starred Ciel Bleu, located in the Hotel Okura Amsterdam, was absolutely phenomenal and a true masterclass in gastronomic excellence.
From the 23rd floor, the panoramic views of Amsterdam as the sun set were simply breathtaking, setting a magical atmosphere for the evening.
I chose the PRESTIGE Menu, and every single course was delicious and perfectly complemented by the thoughtful wine pairing. A truly special start was tasting the limited edition Krug Champagne 170ème Édition for the first time – it was simply spectacular.
While the entire menu was incredible, my absolute highlights were:
- The Lobster with Rhubarb, Celery, and Passion berry – a stunning combination of flavours and textures.
- The Sea Bass with Oscietra caviar, Dutch shrimp, and Red vanilla – delicate and incredibly refined.
- The Wagyu A5 with Aubergine, Mustard seed, and Aleppo pepper – melt-in-your-mouth perfection with a wonderful depth of flavour.
The service was impeccable, attentive without being intrusive. Dining at Ciel Bleu is more than just a meal; it’s an unforgettable experience for all the senses. Highly, highly recommended for a special occasion or simply to indulge in the finest cuisine Amsterdam has to offer.
