The Crispy Curry Tartlet, a delicate balance of spice and sweetness, paired exquisitely with the scallop carpaccio and the rich brown butter emulsion. The steamed Comté cheese soufflé, a cloud of airy perfection, was elevated by the luxurious Albufera sauce, a testament to classic French technique. The confit cod, Basquaise style, was a revelation, the tender fish complemented by the earthy white bean purée and the salty lardo.
The roasted duck magret, with its sweet marinated daikon radishes, showcased the kitchen’s ability to seamlessly integrate contrasting flavors. The berries méli-mélo, a refreshing interlude, was a symphony of textures and tastes, the sugar-free meringue adding a delightful lightness.
The grand finale, the sweet spiced cloud, was a decadent indulgence, the hazelnut praline ripple ice cream harmonizing perfectly with the coffee and cardamom sauce.
